Howto update to the latest version?

why do you want to update? if there is no feature you need from new
versions i'd advise to stay with what debian provides.

if you insist on upgrading, you will have to download the source,
compile it and install :-), something ala
http://www.softwareprojects.com/resources/programming/t-recompileupgrade-nginx-binary-with-no-down-time-1520.html
only that for /etc/init.d/nginx to work as expected you will have to
change the paths which are passed to ./configure.
