Difference between Mainline and Stable Nginx version

Hi,

I am running CentOS Linux release 7.8.2003 (Core) and referring to
https://nginx.org/en/linux_packages.html#RHEL-CentOS. Are there any
difference between stable and mainline version?Should we need to use stable
or mainline for Production environment?

[nginx-stable]
> name=nginx stable repo
> baseurl=http://nginx.org/packages/centos/$releasever/$basearch/
> gpgcheck=1
> enabled=1
> gpgkey=https://nginx.org/keys/nginx_signing.key
> module_hotfixes=true

> [nginx-mainline]
> name=nginx mainline repo
> baseurl=http://nginx.org/packages/mainline/centos/$releasever/$basearch/

> enabled=0
> gpgkey=https://nginx.org/keys/nginx_signing.key

I will appreciate if someone can pitch in for my question to this mailing
