It's strange: xlc_r issues errors on all ngx_log_error()'s, except this one:

    ngx_log_error(NGX_LOG_NOTICE, cycle->log, 0,
                  "using inherited sockets from \"%s\"", inherited);


Could you try to add --with-cc-opt="-D NGX_HAVE_GCC_VARIADIC_MACROS=0"
in ./configure string ?
