I think that nginx does not have a way to let you control the reason phrase.
I was not sure from your paragraph whether you had a system where
you got nginx to return a different reason phrase, for (e.g.) fastcgi
returning 404.
If you had, I'd be interested to see the config.
But it sounds like you don't, so that's ok.
